The war of Angel (la guerra d'Argel in the Italian original) and Matrimonio alla italiana. From the modern ones, Sin City. The use of black, white and the occasional splash of color (just one) was amazing.
There's and edit of RHPS that is done like the wizard of Oz where the beginning is in black and white and the switch to color when the convention is exposed in the time warp
I'd say To Kill a Mockingbird or Some Like It Hot...or Pleasantville but they eventually get colourized so I dont know if that counts
